The Best Pot Roast

Today my post is simple.  I can’t make it better than The Pioneer Woman.  If you haven’t tried it, you should.

The Perfect Pot Roast by the Pioneer Woman

My family loves it.  I follow all her directions.  I just use a lean roast from Costco and my homemade broth/stock.

Then when the roast is done, I remove it to rest, and also strain out all the liquid into a pot and save the carrots and onions in a bowl.

I use the liquid to make gravy.

Pot Roast Gravy

All liquid from above recipe

1 C water

1/2 C flour

salt/pepper to taste

1/4 tsp dried rosemary

Bring Roast liquid to a boil.  Then whisk the flour and water together in a separate bowl and slowly add it to the roast liquid.  Turn the heat down so it just gently boils and keep adding and whisking the liquid until it thickens.  This takes time to thicken, so be patient.  Add seasonings to taste.  If you need to thicken it more, and you have used all the water/flour mixture, make 1/2 C water and 1/4 C flour and add slowly until it’s as thick as you like.  Add more salt/pepper/rosemary as needed.

Serve this with the Roast and some mashed potatoes, my Fresh Bread and a nice green salad.  This always makes my family happy to have this for Sunday dinner or any day for that matter.
