Today’s recipe is super easy! I like to make this when I know I’m going to be busy around dinner time- who am I kidding? I’m always busy around dinner time. Oh how I wish I would have enjoyed when I only had one kid with no where to go. For some reason back then, I thought I was busy. Oh little did I know! Good thing we all can grow up and get perspective!
I really hope you’ll enjoy this recipe. We eat it on rice, but you could also just sauté the veggies and put it in a tortilla-very tasty too!
2/3 C Worcestershire sauce- I like Lea & Perrins
2/3 C Lime Juice- you can also squeeze in some fresh lime juice too
2/3 C La Victoria Mild Taco Sauce-for more heat, just get medium
3 garlic gloves, minced
a dash or two of cayenne pepper
8-10 boneless pork chops
red or yellow onions
any color of peppers
*Sorry for the blurry photo, but you get the idea right?
Anyway, Mix all the ingredients in a bowl and stir. Pour over pork chops in crock pot. You want the liquid to cover the pork chops- it’s okay if there’s a little bit not covered. Otherwise, just make more of the recipe and pour on top. It never hurts to have extra liquid because we like to pour it over the pork chop on top of the rice.
Turn crock pot on HIGH for 5 1/2-6 hours. This meat is so tender it just shreds when done. That is how my kids like their meat-super tender! Serve over rice with sautéed peppers and onions. Fresh pineapple is also very tasty with this.
Happy Family meal time! I hope you have a great weekend!
Life is Good. Share the Good.
PS This also makes a good marinade for grilling steaks.
PSS I will also buy a pork loin and then just trim it and slice it into chops. A lot of times, this is cheaper, and hardly takes any time.
PSSS You can cook this in the Instapot, but I like the texture of the meat a little better in the crock pot. But if that’s all the time you have-it’s still great!
