Today’s recipe(adapted slightly) was given to me by my adopted Oma. She is the most adorable person you’ll ever meet. She is a dear neighbor and she also made these cute little booties for my baby when she was blessed in our church this past December.
I hope you’ll enjoy this recipe! It satisfies so many needs for me, such as: protein source, fiber source, chocolate fix, and best of all it helps me increases my water intake because you’ll need to drink 1 liter of water per cookie due to the sugar intake! Ha-Ha!
This recipe is easily made gluten-free as well. Just check the labels and don’t cross contaminate.:)
So without further delay…
Ingredients:
1/2 C butter, softened
1 C sugar
1 1/4 C brown sugar
3 eggs
3/4 tsp vanilla
3/4 tsp light corn syrup
1 tsp Baking Soda
1 1/2 C smooth peanut butter
4 C quick oats
1/2 lb M&M’s
1/2 lb mini chocolate chips-I use Enjoy Life-gluten, dairy, soy, nut free
Preheat oven to 350º.
In a Bosch machine, or any stand mixer, cream butter and sugars. Then add eggs, vanilla, and corn syrup. Mix. Next add baking soda and peanut butter. Mix. It should look fairly smooth like this when all done.
Then add your oats and mix.
Next add M&M’s, and mini chocolate chips. I never measure- I just pour and mix and stop when it looks good.
Grease cookie sheets lightly with butter, or use parchment paper. Then using a “medium pampered chef” scoop(#40) place 12 scoops onto cookie sheets. (I only took a photo of half my pan.:) )
Bake for 10-11 minutes. I bake two sheets at a time and switch half way through. The cookies are done when the edges are slightly browned. The center will be a little soft looking.
Cool 1-2 minutes on baking sheet. Then remove to a cooling rack. This recipe will make 4 dozen cookies of this size.
And sometimes you’ll have just enough dough left to make the most delicious thing ever in the microwave. Seriously. You’ll thank me. My neighbor Janice introduced me to this concept and my life has been changed.
Scoop two scoops into a microwavable mug.
Microwave for 25 seconds.
Top with some vanilla ice cream, and Wa-La! This is SO GOOD!
