Today’s recipe is one of my most favorite things to bring to a party. It makes a ton, and it’s so pretty!
10 C corn or rice chex- or do both!
9 C popped popcorn- I use Skinny Pop because it’s gluten free and there’s hardly any kernels to get out.
4 C pretzel sticks- I like Rold Gold
6 oz honey roasted peanuts
9-10 oz M&M’s- I don’t measure, just eyeball it!
1/2 C white chocolate chips, melted- I like Guittard white chocolate chips
1 1/3 C sugar
1/2 C light corn syrup
1 C Butter
In a large bowl mix corn chex, popcorn, pretzel sticks, and honey roasted peanuts. Set aside.
In a medium sauce pan, pour in the syrup ingredients. Using a wooden spoon(not plastic like I show, it melts!), stir constantly until it comes to a boil. Boil for about 4 minutes or until soft-ball stage.
Then dump immediately onto contents in large bowl. Stir well to coat. Add M&M’s after you have stirred just a bit. This helps the coating on the M&M’s to not melt.:)
Once everything is coated well. Spread out mix evenly onto a sheet pan that has wax paper or parchment paper.
While this is cooling just a bit, melt your white chocolate chips in the microwave. In a microwave safe bowl, melt the for 30 seconds on 50% power, then stir. You might need 15-20 more seconds on 50% power. Don’t overcook just stir well to see if they are all melted.
Using a fork, drizzle the white chocolate chips.
Once this has cooled all the way, break up into chunks, and put in a serving bowl. Or if you’re running late, like I was this day, then just take it like this and have everyone break off their own chunks!
This is such a great recipe because it helps you to use up the six open packages of random things in your pantry and make something yummy. This is easily made gluten free too, check labels-gluten free pretzels, Chex brand, etc. Have a family member with nut allergies, easy, just omit them.
