The Best Marinade

I just love this recipe for Savory Marinade from Kalyns Kitchen!  It is simply my favorite for grilling chicken.  Check out their website for great photos!

I have tiny alterations, which is just because that’s what I usually have in my kitchen.

6 boneless skinless chicken breasts, I quarter my breasts-cut in half and then in half again so their thinner-I’m always in a hurry at grilling time

1/2 C olive oil

1/4 C Apple Cider vinegar-I like Braggs

3 TBSP mayo-they recommend only full-fat, but I use reduced and it works fine

2 TBSP Worcestershire sauce- I like Lea & Perrins

1/2 fresh lemon juice

1 tsp salt

1 tsp pepper

1 TBSP poultry seasoning

2-3 garlic cloves, minced

1 TBSP paprika

1/2 TBSP onion powder

1 tsp thyme

Trim and cut all chicken breasts as desired.  Put in a gallon plastic bag.*My chicken is slightly frozen still.  Slightly frozen chicken is so much easier to cut.:)

Pour all ingredients in a glass measuring cup and whisk together well.

Pour this into the bag of chicken.  Let marinate for 6 hours.  I like to rotate my baggie every few hours to make sure the marinade is getting to all the chicken.

Pre-heat grill to around 350-400º.  Then grill chicken to desired doneness-I know this isn’t a word, but I like it anyway!:)  I of course forgot to take a picture of our chicken when it was beautifully grilled because everyone was starving.  Sorry!  Head to the link above to see their beautiful chicken.:)

My favorite way to eat this chicken is in a salad.

You could also make my Instant Pot Scalloped Potatoes as a side if you have a husband like mine that likes his chicken stand alone with some type of potatoes.  This particular night I made my mother-in-law’s famous potato salad-recipe to come in the future for sure- and we had lots of fresh fruit and veggies.  I’ve also just served it with baked potatoes when it’s not 100º outside.

Any way you pair this chicken, it will be a win-win.  It is seriously so good.  I hope you have a wonderful weekend.  I’m posting this on a Thursday instead of Friday, because the next couple Friday’s I’m enjoying my last few weekends before crazy soccer and football season officially start!
