Simple Granola Bars

This is a favorite for school lunches.  My kids are SO picky it’s crazy.  So our granola bars are super simple.  We also have nut sensitivities, so I don’t add those, even though I LOVE nuts and would prefer them that way.  This is a basic recipe, so you can always sub out part of the oats or krispy cereal for nuts, coconut, dried fruit, flax seed, etc.

Ingredients:

6 C quick oats

4 C crispy rice cereal

1 pkg enjoy life mini chocolate chips

2 cans sweetened and condensed milk

Grease a large cookie sheet (with edges)-I like to use butter.

Preheat oven to 350º.

In a very large bowl, combine oats, cereal, and chocolate chips.  Mix well.

Add sweetened and condensed milk, and stir until well coated.

Pour mixture onto prepared cookie sheet, and using a sandwich baggie coated with a bit of butter, press mixture down until it’s even.

Bake at 350º for 20 minutes or until very lightly browned.  Let cool for at least 30 minutes before cutting–THIS WILL BE HARD- you will want to eat them right away.  But they need time to stick together.  I usually cut it in 9×4 rows so you get 36 bars.  If you wait too long to cut them, it will give you a workout.  Just saying!

I like to wrap these up in plastic wrap, then put in a freezer baggie.  Then we can take them out and throw into lunches.

We really love these.  I hope you will enjoy them too.  Good luck as school begins!
