Today’s recipe is so delicious! I got this recipe from my brother in law, Paul. He and his wife always have fun recipes for me to try. I love tomatillo’s and I love this type of salsa.
Now my picture is the recipe without avocado because I have two family members allergic to avocado(this is a tragedy I believe). So if you use an avocado, the salsa will be thicker, creamier, and just so good. If you have tomatillo’s you don’t know what to do with, or your neighbor has some, I hope you’ll give this a try.
Ingredients:
1/2 lb tomatillo, quartered
1/2 onion
1 large jalapeño (my brother in law’s recipe says you can steam first if desired)
1 avocado (may need to add a bit of water if too thick, or just start with 1/2)
4-5 cloves of garlic
1/2 bunch cilantro
1- 1 1/2 limes, juiced (I just used one since I was omitting the avocado)
1/4 tsp cumin
1 1/4 tsp salt
1/4 tsp pepper
Directions:
Place all ingredients except seasonings into blender. (notice how there’s no avocado in mine-super sad!)
Once it’s blended to your desired consistency, then pour into a bowl, add seasonings, stir. And enjoy!

I hope you have a wonderful weekend! I am going to be doing some serious de-junking. It’s that time of year right? I think it takes me three good months to convince my kids to get rid of stuff so we can buy them more stuff for their birthdays and Christmas. Why do we do that? Still not sure.
