I have said before that I love soup in the winter! It just makes me feel happy to eat a nice big bowl of soup. And what makes it even better is the perfect biscuit on top! If you happened to miss my post on making my homemade chicken stock with your turkey carcass, well, I linked my chicken stock and turkey recipes here. I could seriously eat this soup every day of my life and not get sick of it. I hope you will give it a try!
Without further adieu…
Ingredients for Soup:
4-6 large baking potatoes
1 carrot, sliced thinly
1 rib of celery, diced
1/2 onion, minced
4 C Turkey stock
2 bay leaves
1/2 tsp dried thyme
1/2 tsp dried basil
1/2 tsp oregano
1/2 tsp salt
1/4 tsp pepper
dash of paprika
2 Cups leftover turkey meat
1/4 C leftover Turkey gravy
1/2 C whipping cream
Directions:
Place chopped potatoes, carrots, celery, and onion in a large pot. Pour in turkey or chicken stock, and all seasonings. Stir.

Bring to a boil, then continue at a low boil for 20-25 minutes or until potatoes are fork tender. Remove bay leaves.
Then add turkey(or chicken if no turkey leftovers), gravy, and cream. Stir. Continue cooking until warmed through, about 7 minutes.

I LOVE having biscuits with this soup. So I’m also adding that recipe.
Biscuits
2 C flour
1 TBSP baking powder
1/4 tsp salt
1/2 C butter, cold, cut into small chunks
1 C milk
Directions:
Stir flour, baking powder and salt together in a medium bowl. Then cut in butter until it resembles coarse crumbs. Then add milk. Stir until just combined. Drop onto greased baking sheet with a large scoop.

Bake at 450º for 10-12 minutes.

Place on top of bowl of soup and enjoy!
