Sweet Potato and Pineapple Au Gratin

I got this amazing recipe off of Better Homes and Gardens {https://www.bhg.com/recipe/sweet-potato-and-pineapple-gratin/}. Of course I tweaked it a bit, but you can click on their link for the original recipe.:) I made this for Thanksgiving and it was a huge hit! Not with my kids of course because there was vegetables in there! But with the adults.:) So without anymore blabbing…here’s what I did.

Ingredients:

  • 1/2 fresh pineapple, cut into very thin chunks
  • 1 C whipping cream
  • 1 tsp cumin
  • 1 Serrano pepper, stemmed, seeded, and finely chopped
  • 3/4 tsp garlic powder or use 2 cloves fresh garlic
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 lbs sweet potatoes, peeled and sliced very thin
  • 1/2 C green onions, thinly sliced
  • 1/3 C Parmesan cheese, divided
  • 2/3 C Mozzarella cheese, divided
  • 1/3 C Ritz crackers, smashed–if gluten free is needed use gluten free crackers or breadcrumbs
  • 1 tsp olive oil

Directions:

*Note: this recipe has a BAKE TIME of 1 hour and 20 minutes– but it’s worth it! The prep work is easy, it’s the waiting while smelling the delicious smell wafting through the house that’s hard!*

Preheat oven to 350 degrees F. Grease a 2 quart baking dish

In a small saucepan heat cream, cumin, serrano pepper, garlic powder, salt, and pepper. Stir occasionally. Don’t boil, just warm.

note that there’s TWO bowls of the sweet potatoes because I was out of bigger bowls-ha-ha! Life with 6 kids!

Layer half of the sweet potatoes, pineapple, and green onions in prepared baking dish. Sprinkle with half of the cheese. Repeat. Then pour the cream mixture on top.

Bake covered for 25 minutes. When time is almost done, mix the crushed ritz crackers and oil in a small bowl. Remove baking dish and uncover. Sprinkle cracker crumbs on top.

Then place back into oven uncovered for an additional 55 minutes or until potatoes are tender and top is lightly browned. {I just stuck a fork in an checked the potatoes-it was hard but I also tasted a bit-It was SO GOOD!}

Let stand 10 minutes before serving.

This is one of the most beautiful, colorful dishes I’ve made. If you have the time, this would be a great healthy option for Super Bowl Sunday.:) You can impress with this beautiful dish! And it makes super yummy breakfast leftovers! It beats cereal any day!
