The Best Lasagna

When I was engaged to my husband, I asked him what were some of his favorite things that his mom made. I seriously couldn’t cook ANYTHING! But I didn’t want him to know that, so this was one way, I could at least learn how to make a few things he liked.:) So I asked his mom to show me how to make her lasagna. This recipe I share today is adapted to how I like to cook it now, but it began with a great tutorial from my amazingly talented mother in law, Coralee.

This is my beautiful mother-in-law Coralee holding my little Lillian at a recent bridal shower. She had 11 kids, so I don’t even need to say how amazing she is, that says it all.

Indgredients:

  • 1/2 – 1 pound of ground beef(I like it with less, my husband likes it with more)
  • 3 (8oz) tomato sauce
  • 1 small can tomato paste
  • 2 tsp dried oregano
  • 2 cloves of garlic, minced
  • salt and pepper to taste(I know this is vague, I just sprinkle it on like I’m seasoning ground beef)
  • 9 lasagna noodles, cooked
  • 1 small container of light cottage cheese
  • 1 lb mozzarella, shredded
  • 1/4-1 /2 C Parmesan cheese, shredded

Directions:

This is a recipe that comes together so easy as long as you start things at the right time. Then everything finishes at the right time to put it all into layers.

  • In a very large pot, bring water to a boil. This will be for the noodles. I like to salt my water too to help with the noodles not sticking together.
  • While this is coming to a boil, in a medium sauce pan, cook ground beef. Then drain the fat. Add the rest of the sauce ingredients{tomato sauce & paste, oregano, garlic, salt/pepper}. Slowly bring this to a boil and let simmer until noodles are done. Stir occasionally so that it doesn’t’ burn on the bottom. If you don’t by pre-shredded cheese like me, this is a great time to shred your cheese and lay all your supplies out on the counter.
  • When the water for the noodles is boiling rapidly, add the noodles and cook according to the package directions. When done, drain the water and lay flat to cool on aluminum foil.
  • Preheat oven to 350 degrees. In a glass casserole dish, place three lasagna noodles lengthwise in the pan. Then spread a little cottage cheese, and mozzarella cheese on top of that.
  • After the cheese layers, then you’ll add your sauce. Then cut your noodles to fit vertically, and repeat all layers {ie cottage cheese, moz cheese, sauce}. Then do your third and final layer. After the sauce of the third layer, top it with the Parmesan cheese.
  • Cover the pan with aluminum foil, and bake for 40 minutes or until it is bubbling and all the cheese on top is melted. You can make this ahead of time, and keep in the fridge. Then take out while oven in heating up, and bake for 1 hour or a little more.

Doesn’t this look so good? I love the smell of this cooking in the oven! I am so grateful for my patient husband. It took me a LONG time to learn how to cook. And now I love it. Actually I love making bread and dessert, but I can’t just feed my family those now can I?

PS This is so easy to double the recipe and take a pan to a neighbor. This cooks really well in those disposable aluminum pans you can get at the dollar store.
