This soup is quick, delicious and so EASY. Pair it with some quick biscuits and you have a wonderful home-cooked meal to warm your family’s bellies.
I apologize for not having lots of photos this time! Life has been a bit crazy the past few weeks, and I just didn’t schedule time to photograph my cooking.:)
6-10 potatoes(depending on size), cubed
2 large carrots, thinly sliced
1 celery stock, finely chopped
1 C zucchini, chopped
1/2 small onion, minced
4 C homemade chicken stock or chicken broth
1 tsp salt
1/2 tsp pepper
1/2 tsp parsley
3/4 C whipping cream
1 C crumbled bacon for topping
1 C cheddar cheese for topping
In a large pot, place potatoes, carrots, celery, zucchini, onion, broth, salt, pepper, and parsley. Bring pot to a boil. Turn down heat a little, so it’s not a rolling boil, but still boiling. Continue to cook for 15 or so minutes until the potatoes are tender.
Add cream and stir. And then it’s done!
Top with bacon and cheddar cheese.
So simple, so good.

Serve with a salad and some fresh fruit. I love to make this on a busy night. I could eat soup every single day. I just love warm soup. I already sense a chill in the air in the mornings and evenings, so my soup loving heart is already excited for “soup season”.
